Easy Tapa Recipes
Vegetarian Slow-Cooker Stuffed Mushrooms
Ingredients
1 tablespoon olive oil
1 pound baby bella mushrooms, stems removed
1/2 cup finely diced onion
1/4 cup finely diced celery
1/4 cup finely diced red pepper
3 cloves garlic, minced
salt and black pepper to taste
1/2 teaspoon dried thyme leaves
1/4 cup dry bread crumbs
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley leaves
Instructions
- Heat the olive oil in a large sauté pan over medium-high heat. Add the mushrooms and sauté for 4 to 5 minutes until they start to brown. Remove the mushrooms from the pan. Add the onion, celery, red pepper, garlic, salt, black pepper, and thyme. Sauté for 4 to 5 minutes until the vegetables are soft.
- In a large bowl, mix the sautéed vegetables and bread crumbs. Also add in the Parmesan cheese, and parsley.
- Stuff each mushroom cap with the vegetable mixture and place them in the slow cooker.
- Cover and cook on low for 4 to 6 hours until the mushrooms are tender.
Patatas Bravas With Cheat Garlic Aioli
Ingredients
1 lb. starchy potatoes like Yukon Gold, peeled and cut into 1″ cubes
1/4 cup olive oil
1 tsp salt
1/2 tsp black pepper
1/4 tsp cumin powder
For the Bravas Sauce:
3 tbsp tomato paste
2 tbsp olive oil
2 cloves garlic, minced
1 small onion, diced
1/2 cup water
1 tsp sugar
1/2 tsp smoked paprika
1/4 tsp cayenne pepper
1/4 tsp salt
1/4 tsp black pepper
For the Garlic Aioli:
1/2 cup mayonnaise
1 clove of garlic, minced
1 tbsp lemon juice
salt and black pepper to taste
Instructions
- Preheat your oven to about 400 degrees F.
- In a large bowl, toss together the potatoes, olive oil, salt, black pepper, and cumin powder. Bake for 25-30 minutes, stirring once or twice during baking. Do this until they are tender and golden brown.
- While the potatoes are baking, prepare the Bravas sauce. Use a medium saucepan to heat the olive oil over medium heat. Add the garlic and onion until softened and tender. Stir in the tomato paste, water, sugar, smoked paprika, cayenne pepper, salt, and black pepper.
- To make the Garlic Aioli, simply combine all of the ingredients in a small bowl. Stir everything together until well incorporated.
- Serve the potatoes with the Bravas sauce and Cheat Garlic Aioli. Enjoy!
Chorizo, Manchego, and Olive Skewers
Ingredients and Instructions
- Preheat the grill to medium-high heat.
- To make the skewers, thread Chorizo, Manchego cheese, and olives onto wooden or metal skewers. Note, if using wooden skewers, soak them in water for 30 minutes before using them.
- Grill the skewers for 5-7 minutes, or until the Chorizo is slightly charred and the cheese is melted.
- Serve with a grilled baguette slice, if desired. Enjoy!
Garlic Shrimp With Lemon and Parsley h3
Ingredients
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon dried oregano
1/8 teaspoon cayenne pepper
3 tablespoons extra-virgin olive oil, divided
1 1/2 pounds large shrimp, peeled and deveined (see Tip)
6 cloves garlic, minced
3 tablespoons fresh lemon juice, divided
Instructions
- Combine salt, black pepper, oregano, and cayenne in a small bowl.
- Heat 2 tablespoons of oil over medium-high heat using the right-sized pan.
- Add shrimp to pan; sauté for 2 minutes or until shrimp turn pink. Transfer shrimp to a plate.
- Add garlic to the pan; sauté for 30 seconds. Return shrimp to pan. Add 1 tablespoon of lemon juice and salt mixture; toss to coat.
- Cook for 1 minute or until the liquid almost evaporates. Take the shrimp out of the pan and keep them warm.
- Add the remaining 1 tablespoon oil and 1 tablespoon lemon
juice to the pan and swirl to coat. Drizzle over shrimp. Sprinkle with parsley, if desired.
Mushroom Croquettes
Ingredients
1 lb. mushrooms, chopped
1 onion, chopped
2 cloves garlic, minced
1 egg, beaten
1/4 cup bread crumbs
1 tsp. salt
pepper to taste
3 tbsp. butter or margarine, divided
Instructions
- In a large skillet, sauté mushrooms, onion, and garlic in 2 tablespoons of butter until tender.
- Cool slightly. In a medium bowl, mix egg, bread crumbs, salt, and pepper. Add mushroom mixture and stir until well blended.
- Shape into 8 patties. In the same skillet, cook patties over medium heat in the remaining tablespoon of butter or margarine until golden brown.
- Do this for about 4 minutes per side. Serve hot. Enjoy!
Hummus Mezze
Ingredients
1 can chickpeas, drained and rinsed
1/4 cup tahini
1/4 cup fresh lemon juice
2 cloves garlic, minced
1 teaspoon ground cumin
Salt and pepper, to taste
Water, as needed
Extra-virgin olive oil, for drizzling (optional)
Directions
- With the motor running, slowly add water until the desired consistency is reached.
- Taste and adjust seasoning as necessary.
- Serve with a drizzle of olive oil, if desired. Enjoy! You may serve it as part of a mezze platter alongside some fresh vegetables and pita bread. Your guests will love it!
