The motivation for Miss Pickle was to build a brand that respects the significance of food & cultural importance of breaking bread & bonding over food. Coming from Mediterranean background, nothing gives Miss Pickle founder Steven Kafrouni more joy than sharing his food & culture.

‘Miss Pickle’ is homage to Steven’s late Mother and ‘1971’ is the year she emigrated to Australia. The brand represents the passion, knowledge & sentiment she had for food and her unmatched love of hospitality.

Building the Brand

Knowing that is was one thing to cook great food but another to build a brand that people would love, Steven left no stone unturned in finding the best in the business to help bring the brand to life. From architects to brand designers, Steven chased down and engaged the professionals that worked on brands that he personally loved.

From the moment the first Miss Pickle opened in 2017, people swarmed in. Not just for a look, but to eat! It was a full house – every day. The food was always amazing, but there were major issues. Staff, service delays, stock levels and general operating processes.

In his quest to build something special, Steven allowed his ambition to exceed his capabilities, and things almost crumbled – fast. It was a very shaky start to say the least.

The one and only saving grace was that the food was exceptional, and customers felt the genuine Mediterranean hospitality that is at the core of what we do. As such, they were forgiving and understanding. Flaws were ironed out and we got things right. This did not happen overnight. It was a tough grind to get there and it took Steven working 12-15 hour days 7 days a week without any time off for over a year. But he achieved exactly what he wanted to. A brand that people loved.

It took two years to be ready to expand the brand with a second site. During which we were blessed to have connected with the most amazing network of professionals who have made the growth of the Miss Pickle Group of Restaurants possible.

Believing in the Brand and Food

With all that confidence and backing, an opportunity presented to open a second Miss Pickle store at The Glen. Plans, permits and here we go again. In no time, the second store was ready to open.

On opening, the restaurant was full, and customers were lining up to get in. Everybody was smiling, the vibe was amazing with happy customers, and the food was pumping out of that kitchen looking as good as ever! It was a magnificent day and all under control. It was at this moment Steven realised that what he envisaged – was finally coming to life.

Over the course of opening 7 restaurants in as many years we have learned a huge amount along the way and connected with the best people in the industry.

Miss Pickle is now established as an authentic Mediterranean chain of restaurants that gives the customer an exceptional experience. Nothing gives us more pleasure than serving authentic recipes prepared fresh using time honoured cooking traditions that makes the customer feel they have entered the Mediterranean.

The brand has grown from strength to strength by providing genuine quality and premium products and produce – and serving them at the most affordable prices for all to enjoy.

In today’s climate of chasing profits, the most important aspect of the restaurant can be neglected. Quality ingredients are cut, shortcuts are taken and overall – the level of food that comes out of kitchens is not the same as what we would cook for the family.

The main ingredient that seems to be missing in some restaurants nowadays is love. As cliche as it is – it’s the truth.

We provide comprehensive relevant legal documentation, disclosure documents, license agreements as well as provide access to a range of legal advisors who can assist in providing independent advice to you.

Training and Development

At Miss Pickle, we have a dedicated hand-picked Management team comprising of Compliance, Quality Control and Training that brings a wealth of experience and knowledge to assist you from your very first day on the job

You will be inducted through our 4 Volumes of Operational Procedures which also includes all our Standard Operating Procedures and all Policies. The team will then guide you through the initial 6 weeks of training from ‘front of house’, ‘back of house’, ‘ordering’, and general operations – both theoretical and practical, hands-on experience, before you receive the keys to your store. We will assist you – every single step of the way.

Licencee Selection

Our aim is to ensure every single licensee is successful and reaps the rewards of their hard work. We only want the best people in their field. We want to ensure a smooth running of your store along with a happy collaboration with us.

It is important that you possess the following attributes to be considered as a licensee: Good people skills, a commitment, passion and great attitude to succeed, good administration skills, energetic, trustworthy and have some good leadership skills.

Miss Pickle Restaurant Group is committed to long-term success. We are not interested in short term gains that is not practical or sustainable for anyone. Miss Pickle Restaurant Group wants to use the experience, expertise and network to set up your business for a fraction of what it would normally cost. The success of our franchise partners is our continued success.

Royalty Fees

We don’t believe that it is right to take an uncapped percentage of our franchise partners’ turnover. If you are going to put in the extra work and your business thrives, you should reap the rewards. As such, royalties will be a small fixed or capped fee depending on the size of the venue / potential turnover.

Step 2

Meeting 2

This meeting will be to progress the process to an orientation stage including a detailed business plan. This meeting will also include site selection, legal documentation, deposits, build time.

Step 3

Training and Development

This meeting will be to establish your requirements, as a licensee of a Miss Pickle Group of Restaurants branded store - or if you wish for us to build your own store. We will discuss investment amount as well as a basic business plan.

Step 4

Completion of build & open for business
